Shrewsbury Biscuits

They say you haven’t had a real biscuit until you have had famous Shrewsbury Biscuits from Kayani bakery from Pune. It was raining outside today even though it’s mid October now (very unusual for Pune this year). I decided to recreate these buttery beauties so that I can reliah it with a hot cup of masala chai.

Shrewsbury are a classic buttery English cookies named after Shrewsbury, the county town from UK. These are made from dough which contains flour, sugar, butter, egg and lemon zest. Very easy to make and tastes too good!

Shrewsbury Biscuits

Classic English buttery Shrewsbury Biscuits


Ingredients

  1. Flour (maida) – 240 gm

  2. Unsalted butter – 100 gm

  3. Powdered Sugar – 90 gm (you can increase this to 125 gm if you like sweeter)

  4. Baking soda – 1/4 TSP

  5. Lemon zest – 1 TSP

  6. Egg – 1 no

Directions

  1. Pre heat oven at 180 degree Celsius

  2. Line a baking tray with parchment paper or silicone baking sheet

  3. In a medium bowl sift flour and baking powder together, keep aside

  4. In another bowl, cream butter and sugar using hand mixer until it looks light and fluffy

  5. Add egg and blend it well

  6. Add lemon zest, mix well

  7. Add flour and baking powder mixture

  8. Mix until well combined

  9. Bring the dough together and make a flat round disc of the dough

  10. Using rolling pin, roll the dough evenly so that is around 5-6 mm thick (1/4 inch)

  11. Using cookie cutter, cut the medium size rounds

  12. Place the cut rounds on the baking sheet leaving one inch gap between them

  13. Bake for around 20 minutes or until sides start turning light brown

  14. Allow the cookies to cool

  15. Serve with a hot cup of tea or coffee
