Who doesn't like Meetha Paan with Gulkand, Saunf and Tuti Fruity in it? How about combining it flavors in cupcakes? Yes, that is what I made today. All the goodness of Meetha Paan with moist cupcake!

These are moist and fluffy cupcakes very easy to make. It doesn't take more than 15-20 minutes to prepare whereas just around 20-25 minutes to bake before you devour these beauties!
Paan & Gulkand Cupcakes - Eggless
Ingredients:
Maida - 90 gms
Baking powder - 1/2 tsp
Tuti fruity - 2 tbsp + 1 tsp (for decoration)
Meetha paan mukhwas - 2 tbsp + 2 tbsp (for decoration)
Curd - 130 gms
Baking soda - 1/4 tsp
Oil - 60 ml (use any neutral oil like sunflower oil)
Caster sugar - 65 gms
Gulkand - 1 tbsp + 1 tsp (for decoration)
Cardamom powder - 1/4 tsp
Paan essence - 1/4 tsp
Green gel color - 1 drop
Directions:
Pre heat the oven at 180 degrees centigrade. Place cupcake molds in muffin pan
In a bowl, take curd and whisk it lightly. Add baking soda, mix well and keep aside for 3-4 minutes. You can see that it's texture changes and looks slightly foamy
In another bowl, mix together flour, baking powder, meetha paan mukhwas and tuti fruity
In the curd & baking soda mixture, now add caster sugar and oil. Mix well using whisk
Add gulkand, cardamom powder, paan essence and green food color. Give a good mix with whisk
Add flour mixture to curd mixture in two parts. Mix well using spatula with cut & fold method
Spoon the prepared batter in cupcake molds such that these are filled only until 2/3 of the molds' capacity
Top the batter with 2-3 pieces of tuti fruity
Bake in the pre heated oven for about 20-22 minutes or until toothpick inserted at the center of the cupcake comes out clean (use only bottom rod setting of your oven for baking)
Remove from oven and allow the cupcakes to cool down
Finley chop the meetha paan mukhwas and mix with reserved gulkand
Decorate the tops of the cupcakes with mukhwas and gulkand mixture. Place a tuti fruity on top and serve
These can be stored in air tight containers for 2-3 days
